Beef Pot Roast

This classic comfort food will never go out of style, especially when you can cook it to perfection in under an hour with a pressure cooker.

pounds beef pot roast

tablespoon vegetable oil

cups water
Salt and pepper

small onion, chopped

bay leaf

Pour oil into 4- or 6-quart pressure cooker. Turn heat selector to medium and brown roast well on all sides; remove roast. Pour water into cooker. Place roast on cooking rack or in steamer basket in cooker. Season roast with salt, pepper, onion, and bay leaf. Close cover securely. Place pressure regulator on vent pipe. COOK 45 MINUTES at 15 pounds pressure with pressure regulator rocking slowly. Let pressure drop of its own accord. Thicken gravy, if desired.
