Garlic Mashed Potatoes
A "garlic lovers" recipe!

pounds russet potatoes, peeled and diced | |

large cloves garlic | |

cups chicken broth | |

tablespoon margarine | |
Salt and pepper |
Place all ingredients except margarine and salt and pepper in 4- or 6-quart pressure cooker. Close cover securely. Place pressure regulator on vent pipe. COOK 5 MINUTES at 15 pounds pressure with pressure regulator rocking slowly. Cool cooker at once. Allow potatoes, garlic, and broth to remain in cooker. Mash potatoes using a potato masher or hand mixer until desired consistency is reached. Add margarine. Season to taste with salt and pepper.
