Seasoned Rice Pilaf
This simple and delightful side dish is a breeze to cook in a pressure cooker.

small onion, chopped | |

cups long grain white rice | |

cups chicken broth | |

cups water | |
1/2 |
teaspoon salt | |
1/2 |
teaspoon oregano | |

teaspoon pepper | |

cups water for pressure cooking |
Heat margarine in 4- or 6-quart pressure cooker at medium heat. Add onions; sauté until tender. Combine onion with rice, broth, 1 3/4 cups water, salt, oregano, and pepper in a metal bowl that will fit loosely in the pressure cooker. Cover bowl firmly with aluminum foil. Pour 2 cups water into cooker. Place bowl on cooking rack or in steamer basket in pressure cooker. Close cover securely. Place pressure regulator on vent pipe. COOK 5 MINUTES at 15 pounds pressure with pressure regulator rocking slowly. Let pressure drop of its own accord. Open cooker, remove foil and set rice aside to steam for 5 minutes.
