Vanilla Custard
A wonderfully creamy custard prepared quickly in the pressure cooker.

cups lowfat milk | |

eggs, slightly beaten | |
1/4 |
cup sugar | |
1/4 |
teaspoon salt | |
1/2 |
teaspoon vanilla | |
Nutmeg | ||

cup water for pressure cooking |
Combine milk, eggs, sugar, salt, and vanilla. Pour into individual custard cups. Sprinkle nutmeg on custards. Cover each cup firmly with aluminum foil. Pour water into 4- or 6-quart pressure cooker. Place custard cups on cooking rack or in steamer basket in pressure cooker. Close cover securely. Place pressure regulator on vent pipe. COOK 5 MINUTES at 15 pounds pressure with pressure regulator rocking slowly. Cool cooker at once. Chill.
